Cabernet Sauvignon Reserve
The 2016 Chateau Elan Cabernet Sauvignon Reserve comes from grapes grown in 2 of our classic vineyards in Woodland (high trellising cordons with original ENTAV French clones) and in Red Hill AVA next to Kelseyville in Lake County (25 plus years old vines VSP trellising with an extreme low yield). It shows the classic California super power cabernet features with an elegance that the previous vintages didn’t have. Grapes harvested on the 19th of September and the 19th of October 2016, the wine aged 100% in new French oak barrels for 10 months, no filtration, no stabilization, extremely low sulfites.
The wine is nearly opaque dusty garnet color. Fruity aromas and flavors of dried cherries and sultanas, plum pie, chocolate, and marinated grape leaves with a satiny, bright, fruity medium-to-full body and a smooth, delightful, medium-long raspberry jam on scone, vanilla nuts, and mocha finish with fine, chewy, dusty tannins and light oak. As usual our cabernet is very bright, tasty and fruit forward, over the next few months its style will develop into a more spicy and smooth one.
